Ounce for ounce, broccoli has more vitamin C than an orange and as much calcium as a glass of milk. One medium spear has three times more fiber than a slice of wheat bran bread. Broccoli is also one of the richest sources of beta-carotene in the produce section.

While it's no surprise that broccoli is packed with a wide range of nutrients, recent studies have recognized the vegetable's potent cancer fighting components. Studies at Johns Hopkins University School of Medicine have discovered that broccoli is rich in substances called isothiocyanates - chemicals shown to stimulate the body's production of its own cancer-fighting substances, called phase two enzymes. These enzymes have the ability to neutralize potential cancer causing substances before they have a chance to damage the DNA of healthy cells.

Broccoli's impressive cancer-fighting power is thought to be due to two separate compounds, indole-3-carbinol (I3C) and sulforaphane. Both of these compounds eliminate cancer-causing substances. I3C works against hormone-induced cancers while sulforaphane boosts the production of cancer-blocking enzymes. Broccoli has been linked to reducing the risk of certain cancers, especially lung, colon, prostate, breast, ovarian and bladder cancer. Further, these naturally occurring compounds in broccoli, already shown to fight cancer in cells, may also be able to reduce risk of high blood pressure, cardiovascular disease and stroke.

Suggested Use:

Mix 1 to 2 tablespoons with recipes, juice, or add to your favorite smoothie.
